Cutting Board Care and Maintenance

With proper care, an oiled end-grain cutting board can remain beautiful and dependable for many years. Wood is a natural material that responds to moisture, heat, and changes in humidity, so consistent cleaning and occasional re-oiling are essential.

Cleaning

Wash the board by hand shortly after use with warm water, mild dish soap, and a soft sponge or cloth. Do not soak or submerge it, and never place it in a dishwasher. After washing, wipe away excess water and allow the board to dry upright or on its edge so air can circulate around both sides.

Oiling

Reapply a food-safe cutting-board oil whenever the wood begins to look pale, dry, or rough. Apply the oil generously to the cutting surface, underside, edges, and any recessed areas, then allow it to absorb for several hours or overnight before wiping away the excess.

During the first few weeks of use, the board may benefit from more frequent oiling. Once conditioned, oiling every few weeks or as needed is usually sufficient. Use linseed oil, food-grade mineral oil or a dedicated cutting-board oil; avoid cooking oils such as olive, sunflower, or rapeseed oil, as they may become rancid.

A food-safe board wax may be applied after oiling to add further protection and create a smoother, more water-resistant surface.

Protecting the Board

  • Do not leave water, juices, or wet food standing on the surface.
  • Avoid prolonged exposure to direct sunlight, radiators, ovens, or other heat sources.
  • Do not place hot cookware directly on the board.
  • Clean and oil both sides to help maintain an even moisture balance.
  • Store the board in a dry, ventilated position rather than flat on a damp surface.

Restoring the Surface

Light knife marks and surface roughness are natural signs of use. When necessary, the board can be lightly sanded with fine-grit sandpaper, cleaned thoroughly, and reconditioned with food-safe oil. Deep damage, separation, or significant warping should be assessed professionally.

Properly maintained, your board will develop a richer tone and character over time—aging with use rather than simply wearing out.
